Chef Eric Shelton, now residing in Dallas Texas, has over 15 years of culinary experience. Native to the changing seasons of Mystic, Connecticut, Eric's interest in food started while growing produce alongside his mother in their home garden. The combination of harvesting vegetables and consuming out of the ordinary produce from the local market sparked Eric's interest in food.
Eric learned his fundamental basics at Grasso Technical School and continued on to Johnson and Wales University in Providence, Rhode Island. Eric worked as a teaching assistant during his time in school which helped develop his managerial and technical skills. Eric also worked alongside Chef Franco Paterno at the Blue Fin Restaurant, housed in the Providence Marriott. Following his time in Rhode Island, Eric moved to New Jersey to work as a Sous Chef for the Wyndham Hotel. There he grew as a hotel chef who focused on the organization and planning of banquets and receptions, and led the al a carte dining for a year.
In 1998, Eric moved to Texas to accept the Executive Chef position at the Wyndham Hotel in downtown Dallas. Eric gained momentum as a seasoned hotel chef and assisted in the testing and implementation of seasonal menus for Wyndham Hotels across the globe. Eager to learn the dynamics of a five star operation, on his days off Eric worked with Chef David Mcmillan at the Nana Grill and Chef Marc Cassel at the Green Room in Deep Ellum for a stint. In 2003, Eric moved to Austin, Texas where he assumed the Executive Chef position for the Embassy Suites. After four years back into the hotel scene, Eric's goal was to work in a fine dining environment. Between spending time at The Driskill Hotel and The Four Seasons in Downtown Austin, Eric his wife Emily and three year old daughter Emma Lynn found their way back to their true home of Dallas, where Eric is the Executive Chef of "M" Dining at the Music Hall. Here Eric skillfully customizes each dining experience around the season and the synopsis of each theatrical production.
